Welcome welcome

Hello there! Welcome to my new Cupcake blog!
For those who know me i am Hexi from RadioHexi.
I've recently decided to set up a cupcake blog because i'm totally obsessed! I love anything with cupcakes on, t-shirts, pillows, bed sheets and i even have a cupcake tattoo.
with all this cupcake-ness i felt it was time to start one entirely based on cupcakes. :D

For my first post I tested out 3 different recipes: Cherry Coke, Rainbow and Kinder bueno.

The Rainbow recipe is everywhere on the internets right now. the Cherry Coke cakes i got inspiration from here but changed it up a bit and the Kinder Bueno cupcakes were actually a borrowed recipe from my friend Emily. Who is accidentally the best cake maker i've ever met. XD

So to start with the Bueno Cakes cause they were pretty simple.


You'll need:
- Basic Vanilla Batter from my recipes page, baked and cooling.
- Basic Butter cream icing
- Kinder Bueno

- Bowl with butter cream in
- Knife
- Spoon or fork

Steps:
1: Take your Bueno bar and open it. Take out the bars and chop the segements into individual segments.

2: With your knife, cut the bottom off the pieces and scoop out the filling and add to the bowl with the butter cream in. I just scrapped it off on the side of the bowl till i was done. Make sure you use all the filling so you get a good flavour in the icing.

3: Mix the filling into the icing and crush/chop up the wafer parts of the bars into small pieces.

4: Spread or pipe the icing onto the top of the cool cakes and sprinkle the crushed wafer pieces on top.

5: Enjoy! Best eaten as soon as possible as the wafers go soft if you leave them too long. The only down side to this recipe.

Verdict: I really enjoyed these cakes. The icing is just sweet enough and you get a good hazelnut flavour. The wafers on top have just the right amount of crunch. :D


Next up where the Cherry Coke Cakes.
I really didn't enjoy these as much as i hoped. I made a few changes to the recipe but it shouldn't have effected it that much. I will try these again when I make them from scratch. I think they went wrong because I just made a big batch of batter for all these cakes and I overmixed the batter etc. I will however try this recipe again in the future. I didn't even take a photo because they were so bad. XD

Rainbow Cakes are last but not least!
In fact these were my favourites!

You'll need:
- Basic Batter
- Red, Yellow, Green and Blue food colouring
- Basic butter cream

- 5 small bowls
- 5 teaspoons
- Large Cupcake cases

Steps:
1: These cakes call for some large cake cases due to the sheer volume of batter in them. Take the 5 small bowls and divide the batter between them adding a bit more to the last 2 bowls.

2: Mix in the food colourings making Red, Orange, Yellow, Green and Blue until you get the colours you want. Bear in mind that the colours will be stronger and brighter once baked. I advise not to add TOO much colouring as it can compromise the flavour of the cake.

3: Once all mixed in, Starting with Red, spoon a small teaspoon of batter into each cup and spread around evenly.

4: Repeat this with all the colours in order Orange, Yellow, Green and Blue layering them up. Be careful not to mix them together. Go slowely and carefully, the best results come with care!

5: Place them in the centre of a pre-heated oven set to 200 Degrees C/ 180 fan oven and let bake for 20 minutes. See my basic recipes list for cooking tips.

6: Take them out and let them cool when cooked and top with white butter cream!


I was really happy with these cakes and I've already got an idea for another recipe. It's Easter today and we're going to see some family later so i might even make them now for then! :D
